In 1907, at the Pasteur Institute, Élie Metchnikoff — who would receive the Nobel Prize in Physiology or Medicine the following year, in 1908, shared with Paul Ehrlich, for the work on phagocytosis he had begun in 1882 — turned his attention from immune cells to a Bulgarian peasant diet.
He had noticed something in mortality records: populations with a high intake of fermented milk seemed to live unusually long. He proposed a mechanism — the lactic acid bacteria in soured milk (Lactobacillus bulgaricus) could suppress the putrefactive bacteria of the gut, and that suppression, not the milk itself, was the active ingredient of a long life. He called the theory orthobiosis: "right living," achieved through the deliberate cultivation of a beneficial internal ecosystem.
In GTCT language, a batch of fermenting milk is a small, literal instance of the operator chain.

O limiar K é o ponto importante: é real, mensurável e é o mecanismo pelo qual a fermentação funciona como tecnologia de conservação — independentemente de qualquer alegação sobre longevidade. O dobramento F é igualmente concreto: a população bacteriana altera o próprio substrato que a sustenta, e essa alteração restringe quem pode crescer em seguida. Note que F aqui transporta influência entre indivíduos da população — não é uma operação pontual sobre cada bactéria isolada.
The K-threshold is the load-bearing part: it is real, measurable, and it is the mechanism by which fermentation works as a preservation technology — independent of any longevity claim. The F-fold is equally concrete: the bacterial population alters the very substrate that sustains it, and that alteration constrains who can grow next. Note that F here transports influence between individuals in the population — it is not a pointwise operation on each bacterium in isolation.
Where a real K-threshold had a much larger U-claim built on top of it

Status: unproven, and by modern standards likely overstated. Metchnikoff's own evidence was correlational — regional mortality patterns, not controlled trials. Twentieth- and twenty-first-century microbiome research has found that ingested L. bulgaricus is largely transient in the human gut rather than colonizing: it does not durably reshape the resident microbiome the way Metchnikoff's model required.
The fermentation mechanism of Section I is real and well established. The longevity mechanism built on top of it is not.
GTCT connection: this is structurally the same move flagged in WP-24, WP-28, and WP-29 — a real, verified lower-level mechanism (K-threshold fermentation chemistry) had a much larger claim (U-stage human-outcome causation) built on top of it without equivalent evidence. Metchnikoff is included here because of this gap, not despite it.

Metchnikoff died in 1916 of heart failure, having drunk fermented milk daily for the last decade of his life. He was 71 — a respectable age for 1916, but not evidence of anything beyond what a comfortable, well-fed life in a research institute already predicts. Worth being precise: the low life expectancy at birth of that era reflected mostly infant mortality; a man who reached adulthood routinely reached his seventies.
He left behind a real fermentation mechanism, a compelling but unproven theory built on top of it, and a habit that a century of yogurt marketing turned into folk certainty. The mechanism is worth keeping. The certainty was never earned — and he would likely have said so himself, being the same scientist who spent thirty years insisting on evidence before phagocytosis was accepted.
