Bitter Cargo

Sugar, cacao, tea, pepper — four mild drugs the world learned to call food. What they do, why we crave them, who grew rich, and who paid.

§ I · What They Do

Four foods that are also mild drugs

Nobody reorganises the planet's shipping lanes for a vegetable. They do it for something the body wants at a level below choice. Three of these four are literal psychoactives, and the fourth hijacks the reward system as surely as any of them.

Cacao carries theobromine — a methylxanthine, cousin to caffeine, but gentler and longer: a mild central-nervous-system stimulant with a half-life of roughly six hours, lifting alertness and mood without caffeine's spike and crash. Wrapped in sugar and fat, it becomes one of the most hyperpalatable substances a human tongue has ever met. Tea pairs caffeine with L-theanine, an amino acid that raises alpha-wave activity in the brain; the two together produce the specific state tea-drinkers chase — awake but calm, focused without the jitter. Pepper works through piperine, the molecule behind its heat, which fires the same TRPV1 receptor a chilli's capsaicin does — a different alkaloid from an unrelated plant family producing a milder, more lingering version of the same burn — and also makes other compounds more bioavailable — a spice that quietly amplifies whatever it rides with. And sugar needs no exotic alkaloid: pure sucrose is a fast key straight into the dopaminergic reward circuit, which is exactly why it is the hardest of the four to stop eating.

Aside: pepper's other party trick is the sneeze. Some sources hold that piperine irritates the nostril lining enough to trigger it, though — fittingly for a bridge chapter built on source-checking — few if any controlled studies have actually tested the claim (see black pepper, Wikipedia, on sneezing). Craving is the engine, but it is not the whole story. Each of these became wrapped in ritual that made the wanting respectable — the tea ceremony, the coffee-house, the chocolate served to European aristocracy before it ever reached a commoner, the pepper counted grain by grain onto a merchant's scale. Scarcity did half the work: a substance the body wants and only the wealthy can buy becomes a marker of rank, and the appetite for the marker outruns the appetite for the thing. By the time price fell and the drug reached everyone, the ritual and the reward had already fused. That is why these four are not fashions that passed. They are habits a civilisation built around a handful of molecules.

§ III · Who Benefits, Who Is Exploited

The ledger under the pleasure

This is the part the sweetness is designed to make you forget, and it is the reason the chapter exists. The demand these molecules created was met, for centuries, by coerced labour — and the profit and the suffering sat at opposite ends of the same rope.

Sugar is the clearest case, and Sidney Mintz made it the model for all the rest. European appetite for sweetness built the Caribbean and Brazilian plantation complex and the transatlantic slave trade that fed it: the "triangular trade" — manufactures to Africa, enslaved people to the Americas, sugar back to Europe — was an engine of capital accumulation that helped power the Industrial Revolution and the British Empire. Cacao repeats the pattern across time: ritual drink of Mesoamerica, then a plantation crop, and today grown largely in West Africa — Côte d'Ivoire and Ghana together supply most of the world's cocoa — where an estimated 1.56 million children were in cocoa-related child labour in the 2018–19 harvest, about 95% of them (roughly 1.48 million) in hazardous work (NORC at the University of Chicago, for the U.S. Department of Labor, 2020). Tea rewrote the map twice: to pay for the Chinese tea Britain could not stop drinking, the East India Company sold opium into China, and when China resisted, Britain fought the Opium Wars to keep the poison flowing — a drug forced on one nation to fund a drug craved by another; meanwhile the tea gardens of Assam and Ceylon were built on colonial and indentured labour. Pepper and the spice trade drew the Portuguese and then the Dutch East India Company (VOC) into the Indian Ocean, where monopoly was enforced with fleets and, at its worst, massacre.

The pleasure is real, the pharmacology is real — and so is the rope. The genius of a drug-food is that the person who craves it never has to see the end where the cost is paid.

That is the whole freight of this bridge. Specialised knowledge and closed markets recur through this book; here they wear their plainest, most physical form — a molecule the body wants, a monopoly to supply it, and a labour force with no choice, three links of one chain. It is not a secret and it is not a conspiracy; it is the open, documented economics of appetite, and it pivots the book from wonder toward cost.

§ IV · The Modern End of the Chain

The fortune and the city it left

The chain does not stop in the nineteenth century. Follow the cacao pod forward and it ends in a handful of private fortunes — and, sometimes, in a padlocked plant in a working city.

Frank C. Mars began boiling buttercreams in a Tacoma kitchen in 1911. His son, Forrest Mars Sr., built the empire: handed the foreign rights to Milky Way, he went to England, then returned in 1940 and founded M&M Limited in Newark, New Jersey. The M&M — chocolate sealed in a sugar shell, the trick borrowed from soldiers eating coated chocolate in the Spanish Civil War — was invented there. Father and son merged their firms in 1967, and the family that owns Mars today sits among the wealthiest and most private in the world: no shareholders, almost no press.

Mars stayed in Newark about eighty-five years. In 2023 it closed its U.S. headquarters there — three hundred and seven jobs — and moved the global head office to Chicago, keeping only its Hackettstown plant. The candy that helped build a private, near-untraceable fortune was born in Newark; Newark received the exit notice. It is not a hidden hand and it is not a plot. It is the plainest possible shape of the economics that runs through this whole chapter: a firm arrives, makes its value out of a place and its people, and moves on when the arithmetic changes.
